- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 (15 oz) can black beans, drained and rinsed
- 1 (10 oz) bag tortilla chips
- 2 cups shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, sliced (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Heat oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 1 minute.
- Add ground beef, breaking it up with a spoon. Cook until browned, about 5 minutes. Drain excess fat.
- Stir in chili powder, cumin, paprika, salt, and pepper. Add black beans and cook 2 minutes. Remove from heat.
- Spread tortilla chips in a single layer on a large baking sheet or oven-safe platter. Top with beef mixture and sprinkle cheese evenly.
- Bake for 5-7 minutes until cheese is melted.
- Remove from oven and top with sour cream, salsa, avocado, cilantro, and jalapeño slices if using. Serve immediately.
Tips
- For extra heat, add a dash of cayenne pepper to the beef.
- Serve with extra salsa and sour cream on the side.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, but nachos are best fresh.
