- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- Discard any mussels that are open or broken. Rinse the rest under cold water.
- In a large pot with a lid, melt butter over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
- Pour in the beer and bring to a simmer. Add the mussels, cover, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels have opened.
