Ingredients
1 lb pizza dough
2 tbsp olive oil
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
2 tbsp grated Parmesan cheese
2 tbsp fresh parsley, chopped
Instructions
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
Divide pizza dough into two equal portions. On a floured surface, stretch or roll each into a 12-inch round. Transfer to parchment paper or a floured pizza peel.
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook, stirring occasionally, until golden and moisture evaporates, about 5-7 minutes. Add garlic, thyme, salt, and pepper; cook 1 minute more. Remove from heat.
Spread half of the pizza sauce over each dough round, leaving a 1-inch border. Top with mozzarella cheese, then sautéed mushrooms. Sprinkle with Parmesan.
Transfer pizzas to the hot oven (or onto the pizza stone). Bake until crust is golden and cheese is bubbly, 12-15 minutes.
Remove from oven, sprinkle with fresh parsley, slice, and serve hot.
Tips
For a crispier crust, pre-bake the dough for 5 minutes before adding toppings.
Substitute shiitake or oyster mushrooms for a different flavor.
