Ingredients
2 large eggs
1 tablespoon milk
Salt and freshly ground black pepper to taste
1 tablespoon unsalted butter
1/2 cup sliced cremini mushrooms
1 tablespoon chopped fresh parsley
1 tablespoon grated Parmesan cheese (optional)
Instructions
In a small bowl, whisk together eggs, milk, salt, and pepper until frothy.
Melt butter in a non-stick skillet over medium heat. Add mushrooms and sauté until golden and tender, about 3-4 minutes. Remove mushrooms and set aside.
Pour egg mixture into the same skillet. Let it cook undisturbed for about 1 minute until edges start to set.
Using a spatula, gently push cooked edges toward the center, tilting the pan to let uncooked egg flow to the edges. Repeat until eggs are mostly set but still slightly moist on top.
Sprinkle mushrooms, parsley, and Parmesan (if using) over one half of the omelette. Fold the other half over the filling. Cook for another 30 seconds, then slide onto a plate. Serve immediately.
Tips
For a fluffier omelette, add a pinch of baking powder to the eggs.
Substitute mushrooms with any variety you like, such as shiitake or oyster.
Serve with a side salad or toast for a complete meal.
