Ingredients
2 tablespoons olive oil
8 ounces cremini mushrooms, sliced
1/2 small onion, thinly sliced
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
4 large flour tortillas (8-inch)
1 cup shredded Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese

Instructions
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and onion; cook, stirring occasionally, until mushrooms are browned and onions are soft, about 5-7 minutes. Add garlic, salt, and pepper; cook for 1 minute more. Remove from heat.
Lay tortillas flat on a work surface. Sprinkle half of each tortilla with cheeses. Divide mushroom mixture evenly over the cheese. Fold the other half of each tortilla over the filling to form a half-moon.
Heat a clean skillet or griddle over medium heat. Place one quesadilla in the skillet and cook until golden brown on the bottom, about 2-3 minutes. Flip and cook until the other side is golden and cheese is melted, about 2 minutes more. Repeat with remaining quesadilla.
Cut each quesadilla into wedges. Serve with sour cream and salsa if desired.
