Ingredients
2 cups rolled oats
1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped
1/2 cup dried fruit (raisins, cranberries, apricots), chopped
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/2 cup honey
1/4 cup coconut oil
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
Spread oats and nuts on a baking sheet and toast for 8-10 minutes until lightly golden. Let cool slightly.
In a small saucepan, combine honey, coconut oil, vanilla, and salt. Heat over medium heat until melted and smooth, stirring occasionally.
In a large bowl, combine toasted oats and nuts, dried fruit, pumpkin seeds, and sunflower seeds. Pour the honey mixture over and stir until well coated.
Transfer mixture to the prepared pan and press firmly into an even layer using a spatula or your hands.
Bake for 15-18 minutes until golden brown around the edges. Cool completely in the pan before cutting into 12 bars.
Tips
For extra crunch, add 1/4 cup of dark chocolate chips after baking.
Store in an airtight container at room temperature for up to a week.
If bars are too crumbly, add an extra tablespoon of honey.
