Ingredients
4 slices sourdough bread
4 slices Muenster cheese
1 large yellow onion, thinly sliced
2 tablespoons unsalted butter, softened
1 tablespoon olive oil
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Heat olive oil in a skillet over medium heat. Add sliced onion, salt, and pepper. Cook, stirring occasionally, until caramelized, about 10 minutes. Set aside.
Spread softened butter on one side of each bread slice. Flip two slices over and spread Dijon mustard on the unbuttered side.
Layer one slice of Muenster cheese on the mustard side, then divide caramelized onions evenly, then top with another slice of cheese. Place remaining bread slices on top, buttered side up.
Heat a clean skillet or griddle over medium heat. Place sandwiches in the skillet and cook until golden brown and cheese is melted, about 3-4 minutes per side. Press gently with a spatula.
Remove from heat, let cool for 1 minute, then slice in half and serve warm.
Tips
For extra flavor, add a sprinkle of dried thyme or a dash of Worcestershire sauce to the onions.
