Ingredients
1 cup quinoa, rinsed
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper (optional)
1 can (15 oz) chickpeas, drained and rinsed
1/2 cup dried apricots, chopped
1 3/4 cups vegetable broth
Salt and pepper to taste
1/4 cup fresh cilantro or parsley, chopped (for garnish)
Instructions
Heat olive oil in a large saucepan over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in cumin, coriander, cinnamon, ginger, and cayenne (if using). Cook for 30 seconds until fragrant.
Add quinoa, chickpeas, apricots, and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is tender and liquid is absorbed.
Remove from heat and let sit covered for 5 minutes. Fluff with a fork, season with salt and pepper, and garnish with fresh cilantro or parsley before serving.
