Ingredients
4 large navel oranges
1/2 cup pitted green olives, halved
1/4 cup pitted black olives, halved
1 small red onion, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1/2 teaspoon ground cumin
1/4 teaspoon paprika
Salt to taste
2 tablespoons fresh cilantro or parsley, chopped
Instructions
Using a sharp knife, cut off the top and bottom of each orange. Stand the orange upright and slice off the peel and white pith in strips. Slice the oranges into 1/4-inch thick rounds, then cut the rounds into half-moons or wedges. Place in a large bowl.
Add the green and black olives and sliced red onion to the oranges.
In a small bowl, whisk together lemon juice, olive oil, cumin, paprika, and salt until emulsified.
Pour the dressing over the orange mixture and toss gently to combine.
Sprinkle with chopped cilantro or parsley. Serve immediately or refrigerate for up to 30 minutes before serving.
