Ingredients
- 1 tablespoon Chinese gunpowder green tea
- 4 cups boiling water
- 1 large bunch fresh mint (about 1 cup packed leaves)
- 3 tablespoons sugar (or to taste)
Instructions
- Rinse the green tea leaves with a little cold water and drain. Place in a teapot.
- Add 1 cup of boiling water to the teapot, swirl, and discard the water (this washes the tea).
- Add the fresh mint leaves and sugar to the teapot.
- Pour the remaining 3 cups of boiling water into the teapot.
- Let steep for 3-5 minutes, then stir.
- Pour a small amount of tea into a glass and pour it back into the pot to mix. Repeat 2-3 times.
- Serve in small glasses, pouring from a height to create a froth.
Tips
- Adjust sugar to taste; traditional Moroccan tea is very sweet.
- For a stronger flavor, bruise the mint leaves before adding.
