Ingredients
- 2 lbs ground moose meat
- 1/2 lb pork fatback, ground
- 1 tbsp kosher salt
- 1 tsp black pepper
- 1 tsp dried sage
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/2 cup ice water
- hog casings, soaked and rinsed
Instructions
- In a large bowl, combine ground moose meat and ground pork fatback.
- Add salt, pepper, sage, thyme, garlic powder, onion powder, and cayenne. Mix well.
- Add ice water and mix until the mixture is sticky and well combined.
- Stuff the mixture into hog casings, twisting into 6-inch links.
- Refrigerate sausages for at least 1 hour to set.
- Grill or pan-fry over medium heat until cooked through, about 12-15 minutes, turning occasionally.
- Let rest for 5 minutes before serving.
Tips
- Keep meat and fat very cold during preparation to ensure good texture.
- Cook to an internal temperature of 160°F (71°C).
- Leftover sausages can be frozen for up to 3 months.
