Ingredients
1.5 lbs ground beef (80/20)
4 slices Monterey Jack cheese
4 hamburger buns, split
1/2 cup mayonnaise
2 chipotle peppers in adobo sauce, minced
1 tablespoon adobo sauce
1 teaspoon lime juice
Salt and pepper to taste
4 lettuce leaves
4 slices tomato
4 slices red onion
Instructions
In a small bowl, mix mayonnaise, minced chipotle peppers, adobo sauce, and lime juice. Set aside.
Divide ground beef into 4 equal portions and shape into patties, slightly larger than the buns. Season both sides with salt and pepper.
Grill or pan-fry patties over medium-high heat for 4-5 minutes per side for medium, or to desired doneness. During the last minute, place a slice of Monterey Jack cheese on each patty and cover to melt.
Toast buns on the grill or in a skillet until lightly golden.
Spread chipotle mayo on the cut sides of each bun. Place a lettuce leaf, tomato slice, and red onion slice on the bottom bun. Top with the patty and close the burger.
Serve immediately.
Tips
For extra flavor, add a slice of bacon or avocado.
If you prefer less heat, use only one chipotle pepper.
