Ingredients
1 cup water
1 cup granulated sugar
1 cup fresh lemon juice (about 4-5 lemons)
1 cup fresh lime juice (about 4-5 limes)
1 teaspoon grated fresh ginger
1/4 teaspoon salt
1/4 teaspoon cayenne pepper (optional, for a spicy kick)
1/2 cup fresh mint leaves, lightly packed
Instructions
In a small saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until sugar dissolves. Remove from heat and let cool slightly.
In a large bowl or pitcher, combine lemon juice, lime juice, grated ginger, salt, and cayenne pepper (if using).
Pour the warm sugar syrup into the citrus mixture and stir well.
Add mint leaves and muddle gently with a wooden spoon to release their flavor.
Let the mixture steep for 10 minutes, then strain through a fine-mesh sieve into a clean bottle or jar. Discard solids.
Refrigerate until ready to use. The base will keep for up to 2 weeks.
Tips
For a non-spicy version, omit the cayenne pepper.
To serve, fill a glass with ice, add 1/4 cup of mocktail base, and top with 3/4 cup soda water or tonic. Garnish with a mint sprig or citrus slice.
Adjust sweetness by adding more or less sugar syrup to taste.
