- 2 cups water
- 3 tablespoons white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon sake
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon butter
- 4 servings fresh ramen noodles
- 4 slices chashu pork (store-bought or homemade)
- 4 soft-boiled eggs, halved
- 1 cup corn kernels (canned or frozen, thawed)
- 4 green onions, sliced
- 1 sheet nori, cut into 4 squares
Instructions
- In a large pot, combine chicken broth and water; bring to a simmer over medium heat.
- In a small bowl, whisk together miso paste, soy sauce, sake, and sesame oil until smooth. Set aside.
- In a separate small skillet, melt butter over medium heat. Add garlic and ginger; sauté until fragrant, about 1 minute. Stir into the broth.
- Reduce heat to low and whisk in the miso mixture. Do not boil after adding miso. Keep warm.
- Cook ramen noodles according to package directions; drain well and divide among 4 bowls.
- Ladle hot broth over noodles. Top each bowl with chashu pork, soft-boiled egg halves, corn, green onions, and a nori square.
- Serve immediately.
Tips
- For a richer broth, add 1 tablespoon of tahini or peanut butter with the miso.
- Store leftover broth and noodles separately; reheat broth gently and cook fresh noodles.
- To make soft-boiled eggs, boil eggs for 6.5 minutes, then plunge into ice water.
