Ingredients
1/4 cup white miso paste
2 tablespoons mirin
2 tablespoons sake
1 tablespoon sugar
1 tablespoon soy sauce
4 (6-ounce) skin-on salmon fillets
1 tablespoon vegetable oil
1 teaspoon sesame seeds (optional)
2 green onions, thinly sliced (optional)
Instructions
In a small bowl, whisk together miso paste, mirin, sake, sugar, and soy sauce until smooth.
Place salmon fillets in a shallow dish and pour the miso mixture over them. Turn to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.
Preheat the broiler to high and line a baking sheet with foil. Brush the foil with vegetable oil.
Remove salmon from marinade, letting excess drip off, and place skin-side down on the prepared baking sheet. Discard remaining marinade.
Broil salmon 6 inches from the heat source for 6-8 minutes, until the glaze is bubbly and the salmon is cooked through (internal temperature 145°F). If desired, broil an additional 1-2 minutes for more caramelization.
Sprinkle with sesame seeds and green onions if using. Serve immediately.
Tips
For a thicker glaze, simmer the marinade in a small saucepan over medium heat for 2-3 minutes before brushing onto salmon.
Leftover cooked salmon can be stored in an airtight container in the refrigerator for up to 2 days.
Serve with steamed rice and a side of sautéed greens.
