Ingredients
1 lb beef sirloin, cut into 1-inch cubes
1/4 cup plain yogurt
2 tablespoons vegetable oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
8 wooden skewers, soaked in water for 30 minutes
Instructions
In a large bowl, combine yogurt, oil, lemon juice, garlic, ginger, paprika, cumin, coriander, turmeric, cayenne (if using), salt, and pepper. Mix well.
Add beef cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
Preheat grill to medium-high heat (or broiler). Thread beef cubes onto skewers, leaving a small space between pieces.
Grill skewers, turning occasionally, until charred and cooked to desired doneness, about 10-15 minutes for medium.
Serve hot with rice, naan, or salad and a side of kachumbari (tomato-onion salad).
Tips
Soak wooden skewers to prevent burning.
For extra tenderness, use beef tenderloin or sirloin.
Serve with lime wedges for squeezing over the skewers.
