Ingredients
2 tablespoons unsalted butter
1 medium onion, finely diced (about 1 cup)
2 medium carrots, peeled and finely diced (about 1/2 cup)
2 celery stalks, finely diced (about 1/2 cup)
Instructions
Melt butter in a large skillet or saucepan over medium heat.
Add the diced onion, carrots, and celery. Stir to coat with butter.
Cook, stirring occasionally, until the vegetables are softened and translucent, about 8-10 minutes. Do not let them brown.
Remove from heat and use immediately in your recipe, or cool and refrigerate for up to 3 days.
Tips
For a richer flavor, substitute butter with olive oil or bacon fat.
Mirepoix can be frozen in an airtight container for up to 3 months.
The classic ratio is 2 parts onion, 1 part carrot, 1 part celery by weight.
