Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
4 large egg yolks
1 teaspoon peppermint extract
3 drops green food coloring (optional)
1/2 cup mini chocolate chips
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
Instructions
Make the ice cream: In a medium saucepan, heat heavy cream, milk, and 1/2 cup sugar over medium heat until steaming. In a bowl, whisk egg yolks with remaining 1/4 cup sugar. Slowly whisk hot cream mixture into yolks, then return to saucepan. Cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon (170°F). Strain into a bowl, stir in peppermint extract and food coloring. Chill completely.
Churn the ice cream: Pour chilled mixture into an ice cream maker and churn according to manufacturer's instructions. During last 2 minutes, add mini chocolate chips. Transfer to a container and freeze until firm, at least 4 hours.
Make the cookies: Preheat oven to 350°F. Line baking sheets with parchment. In a bowl, whisk flour, cocoa, baking soda, and salt. In another bowl, beat butter, brown sugar, and remaining 1/4 cup granulated sugar until light. Beat in egg and vanilla. Gradually add dry ingredients. Dough will be stiff.
Shape and bake: Roll dough into 1-inch balls and place 2 inches apart on baking sheets. Flatten slightly. Bake 8-10 minutes until set. Cool on sheets 5 minutes, then transfer to wire racks to cool completely.
Assemble: Let ice cream soften slightly at room temperature for 5-10 minutes. Place a scoop of ice cream on the flat side of one cookie, top with another cookie, and gently press. Repeat with remaining cookies and ice cream. Freeze sandwiches until firm, at least 1 hour.
Tips
For easier assembly, freeze cookies before adding ice cream.
Wrap each sandwich individually in plastic wrap and store in freezer for up to 2 weeks.
If you don't have an ice cream maker, use store-bought mint chocolate chip ice cream.
