Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 teaspoons peppermint extract
3 drops green food coloring (optional)
1 cup mini chocolate chips
8 ice cream bar sticks
Instructions
In a large bowl, whisk together heavy cream, milk, sugar, salt, vanilla extract, peppermint extract, and green food coloring until sugar is dissolved.
Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency.
During the last 2 minutes of churning, add the mini chocolate chips and mix until evenly distributed.
Pour the ice cream into a 9x5-inch loaf pan lined with plastic wrap, spreading evenly. Insert ice cream bar sticks into the mixture at even intervals.
Cover and freeze for at least 6 hours or until firm.
Once frozen, lift the block out using the plastic wrap and cut into 8 bars along the stick lines. Serve immediately or wrap individually and store in the freezer.
Tips
For a more intense mint flavor, add an extra 1/4 teaspoon peppermint extract.
To easily remove bars, run a knife under hot water before cutting.
Store wrapped bars in an airtight container in the freezer for up to 2 weeks.
