1 1/2 cups all-purpose flour

1/2 cup milk
1/3 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup fresh or frozen blueberries
1/2 cup mini chocolate chips
1/2 cup mashed ripe banana (about 1 medium banana)
1/4 cup chopped walnuts
Instructions
Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin or line with paper liners.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, oil, egg, and vanilla extract.
Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
Divide batter evenly into three small bowls (about 1/2 cup each).
Fold blueberries into first bowl, chocolate chips into second, and banana and walnuts into third.
Spoon each batter into prepared muffin cups, filling each about 2/3 full (8 cups per flavor).
Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
Let cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
