Ingredients
1 lb flank or skirt steak
3 tbsp olive oil
1/4 cup fresh lime juice
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
8 small corn tortillas
1/2 cup chopped fresh cilantro
1/2 cup finely chopped white onion
1 lime, cut into wedges
1/2 cup salsa verde (optional)
Instructions
Slice the steak against the grain into thin strips, about 1/4 inch thick.
In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and pepper. Add steak strips and toss to coat. Marinate for at least 15 minutes (or up to 2 hours in the fridge).
Heat a large skillet or griddle over high heat. Cook the steak strips in a single layer for 2-3 minutes per side until charred and cooked through. Remove from heat.
Warm the tortillas on the same skillet for about 30 seconds per side, until pliable and lightly toasted.
Assemble tacos: place a few strips of steak on each tortilla. Top with cilantro and onion. Squeeze fresh lime juice over each taco. Serve with salsa verde if desired.
Tips
Use fresh corn tortillas for best flavor; double them up if they are thin.
Marinate the steak longer for more flavor, but not over 2 hours as the acid can toughen the meat.
Leftover steak can be stored in the fridge for up to 3 days; reheat quickly in a hot skillet.
