Ingredients
4 ears fresh corn, husked
1/4 cup mayonnaise
1/4 cup Mexican crema or sour cream
1/2 teaspoon chili powder, plus more for dusting
1/4 cup chopped fresh cilantro
1 clove garlic, minced
1/2 cup crumbled cotija cheese
1 lime, cut into wedges
Salt to taste
Instructions
Preheat grill to medium-high heat. Grill corn, turning occasionally, until charred in spots and tender, about 10 minutes.
Meanwhile, in a small bowl, mix mayonnaise, crema, chili powder, cilantro, and garlic.
Remove corn from grill. Immediately brush each ear with the mayo mixture, coating evenly.
Sprinkle with cotija cheese and a light dusting of chili powder. Serve with lime wedges.
Tips
For extra heat, add a pinch of cayenne or hot sauce to the mayo mixture.
If you don't have cotija, feta cheese is a good substitute.
Leftover sauce can be stored in the fridge for up to 3 days.
