Ingredients
4 cups fresh or frozen corn kernels (about 6 ears)
2 tablespoons unsalted butter
1/4 cup mayonnaise
1/4 cup Mexican crema or sour cream
1/2 cup crumbled cotija cheese
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (optional)
1/4 cup chopped fresh cilantro
1 lime, juiced
Salt to taste
Instructions
Heat a large skillet or griddle over medium-high heat. Add butter and corn kernels. Cook, stirring occasionally, until corn is charred and slightly browned, about 8-10 minutes.
In a small bowl, mix together mayonnaise, Mexican crema, chili powder, cayenne (if using), and lime juice.
Transfer the hot corn to a serving bowl. Pour the dressing over the corn and toss to coat evenly.
Sprinkle with cotija cheese and chopped cilantro. Season with salt to taste. Serve immediately.
Tips
For extra flavor, add a dash of hot sauce or Tajín seasoning.
Can be served warm or at room temperature.
