Ingredients
2 tablespoons olive oil
1 medium onion, finely chopped
1 green bell pepper, seeded and finely chopped
2 medium ripe tomatoes, grated or finely chopped
1 teaspoon tomato paste (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (or to taste)
4 large eggs
2 tablespoons chopped fresh parsley (optional)
Instructions
Heat olive oil in a large non-stick skillet over medium heat. Add onion and green pepper; sauté until softened, about 3-4 minutes.
Add grated tomatoes (and tomato paste if using), salt, black pepper, and red pepper flakes. Cook, stirring occasionally, until the mixture thickens slightly, about 3 minutes.
Reduce heat to low. Crack eggs directly into the skillet over the tomato mixture. Stir gently with a spatula to scramble the eggs, mixing them into the tomato mixture. Cook until eggs are just set but still creamy, about 2-3 minutes.
Remove from heat. Sprinkle with fresh parsley if desired. Serve immediately with crusty bread.
Tips
For a richer flavor, use butter instead of olive oil.
