Ingredients
1 1/2 pounds ground beef (80/20)
1 cup breadcrumbs
1/2 cup milk
1/2 cup finely chopped onion
1/4 cup finely chopped parsley
2 large eggs, lightly beaten
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
Instructions
Preheat oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment.
In a large bowl, combine breadcrumbs and milk; let stand 5 minutes until absorbed. Add ground beef, onion, parsley, eggs, garlic, salt, pepper, and thyme. Mix gently until just combined.
Transfer mixture to prepared baking sheet and shape into a 9x5-inch loaf.
In a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce. Spread half of the glaze over the meatloaf.
Bake for 45 minutes. Spread remaining glaze on top and bake another 15 minutes, until internal temperature reaches 160°F (71°C).
Let rest 10 minutes before slicing. Serve with pan juices.
Tips
Use a meat thermometer to ensure doneness without overcooking.
Leftover meatloaf makes excellent sandwiches.
To make ahead, assemble and refrigerate unbaked loaf up to 24 hours; add 10 minutes to baking time.
