Ingredients
1 1/2 lbs ground beef (80/20)
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg, beaten
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
2 lbs russet potatoes, peeled and cubed
4 tablespoons unsalted butter
1/2 cup milk (for mashed potatoes)
Salt and pepper to taste (for mashed potatoes)
Instructions
Preheat oven to 350°F. In a large bowl, combine ground beef, breadcrumbs, 1/2 cup milk, onion, garlic, egg, ketchup, Worcestershire sauce, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix until just combined.
Shape the mixture into a loaf and place on a foil-lined baking sheet or in a loaf pan. Bake for 50-60 minutes, or until internal temperature reaches 160°F. Let rest 10 minutes before slicing.
While meatloaf bakes, place potatoes in a large pot and cover with cold water. Bring to a boil, then reduce to a simmer and cook until tender, about 15-20 minutes. Drain well.
Return potatoes to the pot and mash with butter and 1/2 cup milk until smooth. Season with salt and pepper to taste.
Slice meatloaf and serve with mashed potatoes. Optionally, top with gravy or additional ketchup.
Tips
For a glaze, mix 1/4 cup ketchup, 1 tablespoon brown sugar, and 1 teaspoon mustard; spread on top before baking.
Leftover meatloaf makes great sandwiches.
