Ingredients
1 English muffin, split
1 slice Canadian bacon or ham
1 large egg
1 slice American cheese
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
Toast the English muffin halves in a toaster or under the broiler until golden. Spread with butter.
In a small non-stick skillet over medium heat, cook the Canadian bacon for about 1 minute per side until lightly browned. Remove and set aside.
To make the round egg, lightly grease a metal ring or round cookie cutter (about 3.5 inches) and place it in the skillet over medium heat. Crack the egg into the ring, season with salt and pepper, and cook until the white is set, about 2-3 minutes. Remove the ring, flip the egg, and cook for another 30 seconds for a runny yolk, or longer if desired.
Assemble the sandwich: Place the cooked egg on the bottom half of the English muffin, top with the Canadian bacon, then the slice of cheese. Place the top muffin half on top. Serve immediately.
Tips
For a perfectly round egg, use a mason jar lid ring (remove the lid part) or a tuna can with both ends removed.
If you prefer a firmer yolk, cook the egg for 1-2 minutes after flipping.
You can substitute the Canadian bacon with regular bacon or sausage patty.
To make ahead, wrap in foil and reheat in a 350°F oven for 10 minutes.
