Ingredients
1 English muffin, split
1 large egg
1 slice American cheese
1 breakfast sausage patty (or 2 slices ham)
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
Cook the sausage patty in a skillet over medium heat until browned and cooked through, about 3-4 minutes per side. Remove and keep warm.
While the sausage cooks, butter the cut sides of the English muffin and toast in a toaster or under the broiler until golden.
In a small microwave-safe bowl or ramekin, crack the egg. Pierce the yolk with a fork. Microwave on high for 45-60 seconds until the egg is set but still moist. Alternatively, fry the egg in a ring mold in the skillet for 2-3 minutes.
Assemble the sandwich: Place the cooked sausage on the bottom half of the English muffin. Top with the cooked egg, season with salt and pepper, then add the cheese slice. Cover with the top half of the muffin.
If desired, wrap the sandwich in a paper towel and microwave for 10-15 seconds to melt the cheese.
Tips
For a perfect round egg, use a ring mold or a mason jar lid in the skillet.
To save time, cook the sausage and egg simultaneously.
Substitute Canadian bacon or ham for the sausage patty.
Store any leftover sandwich wrapped in foil in the refrigerator for up to 2 days; reheat in a toaster oven.
