Ingredients
1 English muffin, split
1 frozen sausage patty (or make your own)
1 large egg
1 slice American cheese
1 tablespoon butter, softened
Salt and pepper to taste
Instructions
Cook the sausage patty in a non-stick skillet over medium heat until browned and cooked through, about 4 minutes per side. Remove and keep warm.
While the sausage cooks, toast the English muffin halves in a toaster or under the broiler until lightly golden. Spread butter on the cut sides.
Crack the egg into a small round mold (or use a mason jar ring) in the same skillet over medium-low heat. Season with salt and pepper. Cook until the white is set but the yolk is still runny, about 3 minutes. If you prefer a firmer yolk, cover the pan and cook an additional 1-2 minutes.
Assemble the sandwich: Place the sausage patty on the bottom half of the English muffin. Top with the cooked egg, then the slice of American cheese. Place the top half of the muffin on the cheese.
Microwave the assembled sandwich for 10-15 seconds to help melt the cheese, if desired. Serve immediately.
Tips
For a more authentic shape, use a round egg ring or a cleaned tuna can with both ends removed to cook the egg.
You can make your own sausage patties by seasoning ground pork with salt, pepper, sage, and a pinch of sugar.
Leftover sandwiches can be wrapped in foil and reheated in a toaster oven.
