  1. In a large saucepan, combine sugar, 1 cup water, and lemon juice. Bring to a boil over medium heat, stirring until sugar dissolves. Attach a candy thermometer and cook without stirring until temperature reaches 240°F (soft-ball stage), about 10-15 minutes.
  2. Meanwhile, in a small bowl, whisk together cornstarch, cream of tartar, and remaining 1/4 cup water until smooth. Set aside.
  3. When sugar syrup reaches 240°F, reduce heat to low and slowly whisk in cornstarch mixture. Stir constantly until mixture thickens and becomes translucent, about 5-10 minutes.
  4. Add crushed mastic gum and rosewater (if using). Continue to cook over low heat, stirring constantly, until mixture is very thick and pulls away from the sides of the pan, about 20-30 minutes. It should be pale and stretchy.
  5. Remove from heat and stir in chopped pistachios. Pour into a 8x8 inch pan lined with plastic wrap or parchment paper. Smooth the top. Let cool completely at room temperature, at least 4 hours or overnight.
  6. Once set, dust a cutting board with confectioners' sugar. Turn out the Turkish delight and cut into small squares with a sharp knife dusted with confectioners' sugar. Toss pieces in confectioners' sugar to coat.
