Ingredients
2 cups cold mashed potatoes
1 large egg, lightly beaten
1/4 cup all-purpose flour
1/4 cup finely chopped onion
2 tablespoons chopped fresh chives or parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter or oil for frying
Instructions
In a large bowl, combine mashed potatoes, egg, flour, onion, chives, salt, and pepper. Mix until well combined.
Shape the mixture into 8 patties, about 1/2 inch thick.
Heat butter or oil in a large nonstick skillet over medium heat.
