Ingredients
1/4 cup olive oil
1/4 cup fresh lime juice (about 2 limes)
2 tablespoons orange juice
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Instructions
In a medium bowl, whisk together olive oil, lime juice, and orange juice.
Add minced garlic, cumin, oregano, smoked paprika, salt, black pepper, and cayenne if using. Whisk until well combined.
Place chicken or pork in a resealable plastic bag or shallow dish. Pour marinade over meat, turning to coat evenly.
Refrigerate for at least 30 minutes, or up to 8 hours for deeper flavor. Discard any leftover marinade.
Remove meat from marinade and cook as desired (grill, pan-sear, or roast).
Tips
Reserve a small amount of marinade before adding raw meat to use as a basting sauce during cooking.
