  5. Punch down dough and roll out to 1/2-inch thickness on a floured surface. Cut into rectangles about 3x4 inches. Place on parchment-lined baking sheet, cover, and let rise 30 minutes.
  6. Heat 2 inches of oil in a deep pot to 350°F. Fry doughnuts in batches, 1-2 minutes per side, until golden brown. Drain on paper towels.
  7. For glaze: whisk powdered sugar, maple syrup, and enough milk to reach desired consistency. Dip tops of warm doughnuts into glaze. Let set on wire rack.
