Ingredients
- 1 cup glutinous rice (sticky rice), soaked overnight
- 1 cup coconut milk
- 1/2 cup white sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- 1 tablespoon toasted sesame seeds (optional)
- 1 tablespoon coconut cream (optional, for drizzling)
Instructions
- Drain the soaked glutinous rice and place it in a steamer lined with cheesecloth. Steam over boiling water for 20-25 minutes until tender.
- In a small saucepan, combine coconut milk, sugar, and salt. Heat over medium heat, stirring, until sugar dissolves. Do not boil.
- Transfer the steamed rice to a bowl. Pour the warm coconut mixture over the rice and stir gently to combine. Cover and let rest for 10 minutes.
- To serve, mound the sticky rice on a plate, arrange mango slices alongside, and drizzle with extra coconut cream and sprinkle sesame seeds if desired.
Tips
- Use ripe but firm mangoes for best texture.
- Soak the rice for at least 4 hours or overnight for best results.
- Leftover sticky rice can be reheated in a steamer or microwave with a splash of water.
