Ingredients
1 cup glutinous rice (sticky rice), soaked overnight
1 can (13.5 oz) coconut milk
1/2 cup granulated sugar
1/2 teaspoon salt
2 ripe mangoes, peeled and sliced
1 tablespoon toasted sesame seeds (optional)
1 tablespoon coconut cream (from top of can, for garnish)
Instructions
Drain soaked rice and steam in a cheesecloth-lined steamer over boiling water for 20-25 minutes until tender.
In a saucepan, combine coconut milk, sugar, and salt. Heat over medium, stirring until sugar dissolves, then remove from heat.
Transfer steamed rice to a bowl, pour most of the coconut mixture over it, reserving about 1/4 cup for drizzling. Stir gently to coat, cover, and let rest for 15 minutes.
Serve warm rice on plates, top with mango slices, drizzle reserved coconut mixture, and sprinkle sesame seeds if desired.
Tips
Use ripe, sweet mangoes like Nam Doc Mai or Ataulfo for best flavor.
Soak rice at least 4 hours or overnight for optimal texture.
Leftover sticky rice can be reheated in a steamer or microwave with a damp paper towel.
