  1. Wash the mandarins and lemon. Peel the mandarins and set aside the peels. Remove as much white pith as possible from the peels and slice the peels into thin strips.
  2. Segment the mandarin flesh, removing any seeds and membranes. Squeeze the lemon juice.
  3. Place the sliced peels, mandarin segments, lemon juice, and water in a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes until the peels are tender.
  4. Add the sugar and stir until dissolved. Bring to a rolling boil and cook for 20-30 minutes, stirring occasionally, until the mixture reaches setting point (105°C/220°F on a candy thermometer, or until a small amount gels on a cold plate).
  5. Remove from heat and let cool for 5 minutes. Skim off any foam. Ladle into sterilized jars and seal. Process in a water bath if storing long-term.
