1 cup mandarin orange segments (canned, drained, or fresh)
1/4 cup mandarin orange juice (from the can or fresh)
2 tablespoons rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
2 green onions, sliced
1 tablespoon sesame seeds (optional)
Instructions
In a bowl, toss chicken with soy sauce and cornstarch until coated.
Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden and cooked through, about 3-4 minutes. Remove chicken and set aside.
In the same wok, add garlic and ginger; stir-fry for 30 seconds. Add bell pepper and cook for 1-2 minutes until crisp-tender.
In a small bowl, whisk together mandarin juice, rice vinegar, honey, and sesame oil.
Return chicken to the wok, add the mandarin segments and the sauce. Toss everything together and cook for 1 minute until sauce thickens slightly.
Garnish with green onions and sesame seeds. Serve immediately over steamed rice.
Tips
For extra flavor, add a pinch of red pepper flakes with the garlic and ginger.
If using fresh mandarins, segment them and squeeze the juice from the membranes.
Leftovers can be stored in the refrigerator for up to 2 days.
