Mai Fun, or Singapore Rice Noodles, is a stir-fried rice vermicelli dish with a mild curry flavor, loaded with shrimp, pork, and vegetables. This quick and easy recipe brings the classic takeout favorite to your home kitchen.

Ingredients
8 oz rice vermicelli (mai fun)
2 tbsp vegetable oil
2 large eggs, lightly beaten
4 oz small shrimp, peeled and deveined
4 oz pork loin, thinly sliced
1 small onion, thinly sliced
1 red bell pepper, thinly sliced
2 cloves garlic, minced
1 tbsp curry powder
1/2 tsp sugar
1/2 tsp salt
1/4 tsp white pepper
1 cup bean sprouts
2 green onions, sliced
Instructions
Soak rice vermicelli in warm water for 10 minutes until softened. Drain well and set aside.
Heat 1 tsp oil in a wok or large skillet over medium-high heat. Scramble eggs until just set, then remove and set aside.
Add 1 tsp oil to the wok. Stir-fry shrimp and pork until cooked through, about 2 minutes. Remove and set aside.
Add remaining oil. Sauté onion and bell pepper for 2 minutes. Add garlic and curry powder; cook 30 seconds until fragrant.
Add drained noodles, sugar, salt, and white pepper. Toss and stir-fry for 2-3 minutes until noodles are heated through.
Return eggs, shrimp, and pork to the wok. Add bean sprouts and green onions. Toss to combine and cook 1 minute. Serve immediately.
Tips
For extra flavor, add 1 tablespoon soy sauce or fish sauce with the seasonings.
To make it vegetarian, omit shrimp and pork and add extra vegetables like carrots and cabbage.
