Ingredients
4 (6-ounce) mahi mahi fillets
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
3 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup fresh lemon juice (about 2 lemons)
1/4 cup low-sodium chicken broth
1 tablespoon capers, drained (optional)
2 tablespoons fresh parsley, chopped
Instructions
Pat mahi mahi fillets dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a large nonstick skillet over medium-high heat. Place fillets in the skillet and cook until golden brown, about 4 minutes per side, or until fish flakes easily with a fork. Transfer to a plate and tent with foil.
Reduce heat to medium. Add butter to the skillet. Once melted, add garlic and cook for 30 seconds until fragrant.
Stir in lemon juice, chicken broth, and capers (if using). Bring to a simmer and cook for 2 minutes, scraping up any browned bits from the bottom of the pan.
Return fish to the skillet and spoon sauce over the top. Cook for 1 minute to warm through.
Sprinkle with parsley and serve immediately.

For a thicker sauce, whisk in 1 teaspoon of cornstarch mixed with 1 tablespoon cold water before adding the fish.
