- 1 lb elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 1 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 4 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
Instructions
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Cook macaroni according to package directions until al dente. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and cream. Add salt, pepper, paprika, and cayenne if using. Cook, stirring, until thickened, about 5 minutes.
- Remove from heat and stir in 3 cups of cheddar, all the mozzarella, and Parmesan until melted and smooth.
- Combine the cooked macaroni with the cheese sauce. Pour into prepared baking dish.
- Top with remaining 1 cup cheddar and breadcrumbs. Bake for 25-30 minutes until bubbly and golden brown.
- Let rest for 10 minutes before serving.
