Ingredients
8 oz elbow macaroni
2 cups broccoli florets
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Instructions
Bring a large pot of salted water to a boil. Add macaroni and cook according to package directions until al dente. In the last 2 minutes of cooking, add broccoli florets. Drain and set aside.
In the same pot, melt butter over medium heat. Whisk in flour and cook for 1 minute until bubbly.
Gradually whisk in milk, salt, pepper, and paprika. Cook, stirring constantly, until the sauce thickens, about 3-4 minutes.
Remove from heat. Add cheddar, mozzarella, and Parmesan cheeses, stirring until melted and smooth.
Return the macaroni and broccoli to the pot. Stir until well coated with cheese sauce. Serve immediately.

For a crispy topping, transfer to a baking dish, sprinkle with breadcrumbs, and broil for 2-3 minutes.
