Loukoumades are Greek honey puffs, crispy on the outside and fluffy on the inside, drenched in honey syrup and topped with cinnamon and walnuts. This recipe brings the traditional street food to your home kitchen.

Ingredients
1 cup warm water (110°F)
1 teaspoon active dry yeast
1 teaspoon sugar
1 cup all-purpose flour
1/2 teaspoon salt
1 large egg, beaten
1 tablespoon olive oil
Vegetable oil, for deep frying
1 cup honey
1/2 cup water
1 cinnamon stick
1 teaspoon lemon juice
Ground cinnamon, for garnish
Chopped walnuts, for garnish
Instructions
In a small bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
In a large bowl, whisk together flour and salt. Add the yeast mixture, beaten egg, and olive oil; stir until smooth. Cover with plastic wrap and let rise in a warm place for 1 hour, until doubled.
In a small saucepan, combine honey, 1/2 cup water, cinnamon stick, and lemon juice. Bring to a simmer over medium heat, then reduce heat to low and keep warm.
Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
Dip a spoon in cold water, then scoop a small amount of dough (about 1 tablespoon) and use another wet spoon to push it into the hot oil. Fry in batches, turning occasionally, until golden brown, about 2-3 minutes per batch.
Remove with a slotted spoon and drain on paper towels. Immediately drizzle with warm honey syrup and sprinkle with cinnamon and walnuts. Serve warm.
Tips
Keep the dough covered to prevent a skin from forming.
For extra crispy loukoumades, add 1 tablespoon of cornstarch to the flour mixture.
