Ingredients
1 lb fresh or frozen green beans, trimmed and cut into 2-inch pieces
2 tablespoons olive oil
1 large onion, finely chopped
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 can (14.5 oz) diced tomatoes, with juices
1 can (15 oz) tomato sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 cup water, plus more as needed
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic, cumin, coriander, and cinnamon; stir for 1 minute until fragrant.
Stir in diced tomatoes, tomato sauce, salt, pepper, and water. Bring to a simmer.
Add green beans, stir to coat. Cover and cook over low heat for 30-35 minutes, until beans are tender, stirring occasionally. Add more water if sauce thickens too much.
Stir in lemon juice. Taste and adjust seasoning.
Serve hot, garnished with parsley.
Tips
For a richer flavor, use homemade tomato sauce or crushed tomatoes.
