A classic New England lobster roll features tender chunks of fresh lobster meat lightly dressed with mayonnaise and served in a buttered, toasted split-top hot dog bun.

Ingredients
1 1/2 pounds cooked lobster meat (from about 4 lobsters), cut into bite-sized chunks
1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh chives or celery leaves
Salt and freshly ground black pepper to taste
4 split-top hot dog buns
2 tablespoons unsalted butter, softened
Instructions
In a medium bowl, gently combine lobster meat, mayonnaise, lemon juice, and chives. Season with salt and pepper. Cover and refrigerate while preparing buns.
Spread the outside of each bun with softened butter. Heat a large skillet or griddle over medium heat. Toast the buns on both sides until golden brown, about 2 minutes per side.
Fill each toasted bun with the lobster mixture. Serve immediately.
Tips
For a richer flavor, substitute half the mayonnaise with melted butter.
Serve with potato chips and a pickle spear on the side.
If using whole lobsters, boil them for about 8-10 minutes, then cool and extract meat.
