Ingredients
- 4 large russet potatoes (about 2 lbs)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 2 green onions, sliced
- Optional: pickled jalapeños, ranch dressing
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Scrub potatoes and cut each into 8 wedges. Place in a large bowl.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Pour over potato wedges and toss to coat evenly.
- Arrange wedges in a single layer on the prepared baking sheet, skin side down.
- Bake for 25 minutes, then flip wedges and bake another 10-15 minutes until golden and crispy.
- Remove from oven and sprinkle cheese over wedges. Return to oven for 2-3 minutes until melted.
- Transfer to a platter. Top with crumbled bacon, sour cream, green onions, and any optional toppings. Serve immediately.
Tips
- For extra crispiness, soak potato wedges in cold water for 30 minutes before drying and seasoning.
- Customize toppings: try chili, guacamole, or salsa for a loaded nacho twist.
- Leftover wedges can be reheated in an air fryer or oven to restore crispiness.
