Ingredients
2 large russet potatoes (about 1.5 lbs)
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
1/2 cup sour cream
2 green onions, sliced
Optional: pickled jalapeños, ranch dressing, hot sauce
Instructions
Preheat oven to 400°F (200°C). Line two baking sheets with parchment paper.
Scrub potatoes and slice into 1/8-inch thick rounds using a mandoline or sharp knife. Place in a large bowl.
Toss potato slices with olive oil, salt, and pepper until evenly coated.
Arrange slices in a single layer on prepared baking sheets. Bake for 15 minutes, then flip chips and bake another 5-10 minutes until golden and crispy.
Remove chips from oven. Sprinkle shredded cheese evenly over chips and return to oven for 2-3 minutes until melted.
Transfer loaded chips to a serving platter. Top with crumbled bacon, dollops of sour cream, and sliced green onions. Serve immediately.
Tips
For extra crispy chips, soak sliced potatoes in cold water for 30 minutes, then dry thoroughly before tossing with oil.
