Ingredients
1 (28 oz) bag kettle-cooked potato chips
1 lb cooked bacon, crumbled
2 cups shredded cheddar cheese
1 cup sour cream
1/2 cup chopped green onions
1 cup milk
2 tbsp butter
2 tbsp all-purpose flour
1/2 tsp garlic powder
Salt and pepper to taste
Instructions
Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk, garlic powder, salt, and pepper. Cook, stirring constantly, until thickened, about 3-4 minutes. Remove from heat and stir in 1 cup of cheddar cheese until melted. Set aside.
Layer half of the potato chips in the prepared baking dish. Sprinkle with half of the bacon and half of the green onions. Drizzle half of the cheese sauce over the top. Repeat layers with remaining chips, bacon, green onions, and cheese sauce.
Top with remaining 1 cup cheddar cheese. Bake for 20-25 minutes, until bubbly and cheese is melted. Let stand 5 minutes before serving. Garnish with extra green onions if desired.
Tips
For extra crunch, reserve some chips to crush and sprinkle on top before baking.
Substitute turkey bacon or omit bacon for a vegetarian version.
