Ingredients
- 1 lb ground beef
- 1 packet (1 oz) taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 bag (13 oz) tortilla chips
- 2 cups shredded Mexican blend cheese
- 1 cup pico de gallo or salsa
- 1/2 cup sour cream
- 1 avocado, diced
- 1/4 cup sliced jalapeños
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with foil.
- In a skillet over medium-high heat, cook ground beef until browned, breaking it apart. Drain excess fat.
- Add taco seasoning and water; stir and simmer until thickened, about 2 minutes. Stir in black beans.
- Spread tortilla chips in an even layer on the baking sheet. Top with beef-bean mixture and sprinkle cheese evenly.
- Bake for 8-10 minutes until cheese is melted and bubbly.
- Remove from oven and immediately top with pico de gallo, sour cream, avocado, jalapeños, and cilantro. Serve hot.
Tips
- For a vegetarian version, replace beef with extra black beans or seasoned tofu.
- Customize with toppings like sliced olives, pickled onions, or hot sauce.
- Leftovers can be stored in the fridge but chips will soften; reheat in oven to crisp.
