Ingredients
2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
4 tablespoons unsalted butter, softened
1/2 cup sour cream
1/2 cup whole milk, warmed
1 cup shredded sharp cheddar cheese
6 slices bacon, cooked and crumbled
3 green onions, thinly sliced
Salt and black pepper to taste
Instructions
Place potatoes in a large pot and cover with cold water by 1 inch. Add 1 tablespoon salt. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes.
Drain potatoes and return to the pot. Mash with a potato masher or ricer until smooth.
Add butter, sour cream, and warm milk. Stir until well combined and creamy.
Fold in 3/4 cup cheddar cheese, half the bacon, and half the green onions. Season with salt and pepper.
Transfer to a serving dish. Top with remaining cheese, bacon, and green onions. Serve hot.
Tips
For extra flavor, use smoked cheddar or add a pinch of garlic powder.
To keep warm, cover and place in a low oven (200°F) for up to 30 minutes.
