Ingredients
4 large russet potatoes (about 2 lbs), peeled
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
3 tablespoons vegetable oil, divided
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 green onions, sliced
Instructions
Shred the potatoes using a box grater or food processor. Place shredded potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
In a large bowl, combine the shredded potatoes, salt, pepper, and garlic powder. Toss to mix.
Heat 2 tablespoons of oil in a large non-stick skillet over medium-high heat. Add the potato mixture and press into an even layer. Cook for 5-7 minutes until the bottom is golden brown and crispy.
Carefully flip the hash browns in sections or as a whole patty. Drizzle the remaining 1 tablespoon oil around the edges. Cook for another 5-7 minutes until the second side is golden and crispy.
Sprinkle the cheese evenly over the hash browns, then top with crumbled bacon. Cover the skillet and cook for 1-2 minutes until the cheese is melted.
Remove from heat, sprinkle with sliced green onions, and serve immediately.
Tips
For extra crispiness, soak shredded potatoes in cold water for 10 minutes, then drain and squeeze dry.
